Caribbean-style rice & beans

Maciek and I have been on a diet for the past month, so I haven’t been posting nearly as many delicious food posts recently. Here’s a fun Caribbean-style rice & beans dish that I made Bento boxes of for lunch this week:

Each portion contains:

  • 50 g (dry) black turtle beans with 2 tsp coconut milk powder
  • 25 g (dry) organic red cargo rice
  • 80 g mashed sweet potatoes with 5 g butter, cinnamon, nutmeg, chili, cayenne, paprika and salt
  • half a banana with lemon juice, cinnamon and cayenne, baked at 225 F for 2 hours
