I decided to try making some Indian food with our great selection of spices and dried beans/peas/lentils. It worked out great!

Pad Thai

A special treat because we can’t get the noodles here. The store occasionally has shrimp though. Other than that, all it takes is some ginger, garlic, eggs, red pepper, sugar, fish sauce, soy sauce, lime juice, rice vinegar, peanut butter, and some frozen cilantro from our garden last summer. Super fast to make and delicious!
